Beta-carotene is probably the
best known of the carotenoids, those red,
orange, and yellow pigments that give color to
many fruits and vegetables. The body converts
beta-carotene into vitamin A. Taken as a
supplement, this powerful antioxidant counters
the effects of free radicals and may help to
protect against and treat certain cancers. It
may even help to strengthen the immune system,
prevent heart disease and night blindness.
Scientists are also exploring its potential for

DEFICIENCY

grow, fortifying cell membranes so they are less
vulnerable to attack or damage and altering cell
production so abnormal cells are less likely to
develop. Vitamin A also aids in the prevention
of tissue damage caused by radiation.
